A thick omelette served cut into wedges

Recipe Ingredients for Spanish Tortilla

6 eggs, beaten
1 tspn olive oil
2 tbspn parsley
100 g peas
200 g potato, cubed and cooked

Recipe Directions for Spanish Tortilla

  1. heat oil in deep frying pan

  2. add potatoes and brown slightly

  3. add peas

  4. mix parsley with egg and add to pan

  5. cook over low heat until set

  6. Slide onto plate, turn over and cook on the other side until set.

  7. Serve cut into wedges
