Traditional Spanish style omelette

Recipe Ingredients for Spanish Tortilla

2 eggs
3 egg whites
1/2 onions
3 potatoes
4 mushrooms
1/4 cup olive oil

Recipe Directions for Spanish Tortilla

  1. Heat Olive Oil to medium Temp.

  2. Slice potatoes thinly

  3. put potatoes in oil and low heat

  4. add chopped onions and veggies of choice

  5. cook until soft

  6. beat eggs and whites in separate bowl (whites can be substituted for whole eggs)

  7. drain (but save) oil

  8. add vegetables to eggs

  9. pour egg mix into pan and cook on med. temp for 12 min

  10. cook until outside is set and inside is not

  11. take off heat and let sit for 15 min.

  12. flip tortilla back into the pan and cook for another 10 min.

  13. Serve warm
