This is a hearty, Spanish-inspired frittata. Recipe courtesy of Woman's Day magazine.

Recipe Ingredients for Spanish-style tortilla with salami and red potatoes

1/4 lb thinly sliced salami, halved
1 large onion, chopped
3/4 lb red potatoes
2 tsp olive oil
1 1/4 cup fresh flat-leaf parsley
8 large eggs
4 oz Cheddar cheese, grated

Recipe Directions for Spanish-style tortilla with salami and red potatoes

  1. Saute the salami over medium heat, remove from pan.

  2. Saute the onion and potatoes, seasoned with salt and pepper and olive oil, for about 10 minutes, until soft and beginning to brown.

  3. Stir in 1/4 cup of parsley, chopped, and salami.

  4. Whisk the eggs and cheese together, add to saute pan.

  5. Bake in preheated oven for 12 minutes at 400 degrees, until a knife inserted in the center comes out clean.
