Spanish Tapas inspired potatoes, peppers and eggs

Recipe Ingredients for Spanish Style Potatoes and Eggs

3 potato small (1-3/4" to 2-1/2" dia) Potatoes, Red, Flesh And Skin, Baked
1.333 medium raw Tomato Roma
5 strips Peppers, Sweet, Green
2 tbsp Peppers, Sweet, Red
2 tbsp chopped Onions
2 tbsp Grapeseed Oil
2 large Egg, Whole
1 dash Pepper, Black
0.25 tsp Salt, Table

Recipe Directions for Spanish Style Potatoes and Eggs

Heat oil in skillet. Add fined diced onion and sweet peppers and sautee for 10 minutes or until cooked well and fragrant. Add diced tomatoes and continue to sautee until mixture becomes thick and saucey. Pre-cook potatoes in microwave and then cut into quarters. Add potatoes to skillet and coat potatoes in mixture. Add salt and pepper to taste. After another 3-5 min, make space for eggs and drop them in, sunny side up. Let eggs break up a little mixing them around with the veggies/potatoes without completely scrambling them. Cover and cook another 2 min on low. Removed from heat when eggs appear cooked through or when desired (if you like runny eggs) and serve!
