Recipe Ingredients for SPANISH STYLE CHICKEN

3 lb chicken, cut up
3 T flour
1 t salt
1/4 t pepper
3 T shortening
1 cup rice, uncooked
1/2 cup onion, chopped
1/2 t garlic, minced & fresh
1 cup tomato juice
2 bouillon cubes, dissolved in 2 cups boiling water
10 oz peas, frozen and thawed

Recipe Directions for SPANISH STYLE CHICKEN

Heat oven to 350. Rinse chicken & pat dry. In pie plate or shallow dish, mix flour, salt & pepper. Coat chicken with seasoned flour, shaking off excess. In 10" skillet heat oil over high heat until very hot. Brown chicken in 2 batches in hot oil; remove to 3 quart baking dish or casserole & sprinkle with rice. Reduce heat to low, add onion & garlic and cook 4 minutes, stirring occasionally until soft. Add to boiling dish. Add broth & tomato juice to skillet. Increase heat to high & bring to simmer, scraping up browned bits from bottom. Pour over chicken. Cover & bake 1 hour. Top with peas. Cover & bake 10-12 minutes longer, until peas are cooked.
