A nice sandwich to have in the winter when good fresh tomatoes cannot be found. Serve with a small glass of Spanish red wine.

Recipe Ingredients for Spanish Sandwich

4 oz cheese, manchego
8 slices whole grain bread
4 slices ham, prosciutto
1/2 c sun dried tomatoes

Recipe Directions for Spanish Sandwich

  1. Preheat broiler. Place one slice of cheese on 4 slices of bread. Add prosciutto, tomatoes, and another slice of cheese, and top with a slice of bread.

  2. Put under the broiler for a minute or so, until cheese starts to melt.
