Quick and easy cod. Can be made ahead and reheated

Recipe Ingredients for Spanish roast Cod

450 gram cod
2 garlic cloves
1 onion
1 red pepper
1 tsp smoked paprika
2 large tomatoes
300 ml crushed tomatoes

Recipe Directions for Spanish roast Cod

  1. Preheat oven to 200C, 400F, Gas mark 6

  2. Cut the Cod into 4 equal pieaces and place in an oven proof dish.

  3. Heat a non stick pan and dry fry the garlic and onion for 2-3 minutes until soft. Add the red pepper, smaked paprika, tomatoes and season.

  4. Spoon the sauce over the fish and bake, uncovered, in the for 10-15 minutesd.

  5. Remove from the oven and allow to rest for 1 minute. Serve with new potatoes (boiled in the skin) and a selection of fresh vegetables.
