Spanish rice with assorted vegetables

Recipe Ingredients for Spanish Rice with Veggies

2 cups long grain rice
3 tomatoes
1/4 cup cilantro
3 squash
1 onion
16 oz tomato sauce
3 green onions

Recipe Directions for Spanish Rice with Veggies

  1. saute vegetables in deep pan, add salt, pepper, oregano, garlic powder and cumin to taste

  2. add tomato sauce and 1 cup water, bring to a simmer and add rice (the rice was washed several times with cold water to remove some of the starch before adding it to the vegetable mixture)

  3. Cook on low for 45 minutes or until rice is done
