A salsa and rice mix, served with sour cream and chips.

Recipe Ingredients for Spanish Rice

2 1/2 cup, chopped Peppers, Sweet, Green
1 1/2 cup, chopped Onions
1 tsp Garlic
6 4/5 grams Olive Oil
2 portion ( yield from 1/2 lb raw meat ) Beef, Ground, 90% Lean Meat / 10% Fat, Crumbles
28 oz Crushed Tomatoes
1 cup Rice, Brown, Medium-grain
1 tsp Salt, Table
1/4 tsp Pepper, Black

Recipe Directions for Spanish Rice

  1. Dice onion and green pepper, add to the hot olive oil in your pot, stir.

  2. Mince or press garlic into the pot, cook for 2-3 minutes on medium.

  3. Add crushed tomato, salt and pepper. Let simmer for a couple of hours.

  4. Make the rice according to package directions.

  5. Brown ground beef until no longer pink; drain then add to the salsa mix.

  6. When the rice is finished, add it to the pot also.

  7. Serve immediately with sour cream and tortilla chips if desired.

  8. Black beans and cilantro (pesto) would also work well with this.
