Classic Spanish Rice. Excellent cooled then reheated!

Recipe Ingredients for Spanish Rice

16 oz Medium Grain Rice
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 medium (2-1/2" dia) Onions
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
4 tsp Chicken Base
4 oz Tomato Paste
0.25 tsp Salt, Table
4 cup (8 fl oz) Water
2 tbsp Olive Oil

Recipe Directions for Spanish Rice

  1. Add bouillon + salt + water together, let sit.

  2. Pour rice into a deep pot (wok) and stir in 2 T oil so that every grain is coated.

  3. Cook rice on medium and constantly stir, using a spatula, until it becomes a light toasted color (20-25 min), be careful not to burn.

  4. Add onion and green pepper, cook until they become soft, add more oil if needed.

  5. Stir in tomato, cook 2-3 min.

  6. Tilt pot, remove any excess oil.

  7. Add tomato paste, stir in.

  8. Pour water mix over rice. DO NOT STIR. Cover.

  9. Bring to a boil, then lower heat and cook for 25-30 min, or until most liquid evaporates. DO NOT LIFT LID DURING THIS TIME.
