Spanish Rice Recipe

A lighter, healthier version of an old favorite. I use my rice cooker to prepare the rice.

Recipe Ingredients for Spanish Rice

3 cups brown rice
1 green pepper
1/2 onion
1 t. minced garlic
1 t. olive oil
1 cup marinara sauce
1/2 cup salsa
1 t. cumin
1 t. chili powder
1 cup corn

Recipe Directions for Spanish Rice

  1. Cook 3 cups of brown rice

  2. Saute garlic, onion and green pepper in olive oil.

  3. Add corn, marinara sauce, salsa, cumin and chili powder.

  4. Cook on medium heat for 15 minutes, stirring occasionally.

  5. Add prepared rice. Bring to medium-high heat and serve.
