This easy recipe is great for a light dinner or a side dish. Add a salad with your favorite light dressing and you are good to go!

Recipe Ingredients for Spanish Rice

1 c dry minute Rice
1 tablespoon extra virgin olive oil
1 pint canned tomatos
1 tablespoon green pepper
1 tablespoon white onion
1 dash of salt
1 dash of pepper
1 dash of paprika
4 slices of turkey bacon

Recipe Directions for Spanish Rice

  1. Brown the turkey bacon.

  2. Add rest of ingredients.

  3. Simmer on low until rice is cooked, or about 45 min.
