Yellow Rice with tomatoes and veggies

Recipe Ingredients for Spanish Rice

1 cup carrots
1 cup celery
14 oz stewed tomatoes
4 cups cooked yellow rice
2 tbs olive oil

Recipe Directions for Spanish Rice

Add yellow rice, 1 cup diced carrots, 1 cup diced celery, 1 can (14 oz) stewed tomatoes (with garlic and basil) and 2 cups of water in casserole dish and cook in over at 400 degrees for 35 minutes (can add chicken breasts if want to make a full meal)
