Casserole of ground beef and rice with aromatic vegetables.

Recipe Ingredients for Spanish Rice

1 lb ground beef
1 cup rice
1 cup onions, chopped
1 green pepper
2 cloves garlic
1 1/2 cups tomatoes, diced
8 oz V8 juice
1/4 tsp salt

Recipe Directions for Spanish Rice

  1. Brown the beef and crumble

  2. Remove from pan

  3. Put chopped vegetables into the same pan and saute until the onions are translucent

  4. Put the meat back in the pan

  5. Add the tomatoes and V8 and about 1 cup of water

  6. Bring to a boil and stir in the rice

  7. Turn down to a low simmer, cover and cook for 20 minutes or until the rice is done and the liquid is absorbed.
