An easy side dish, that is quick if you use converted or basmati rice

Recipe Ingredients for Spanish Rice

1 tsp olive oil
1/2 onion, chopped
1 cloves garlic, minced
3/4 cups rice, uncooked
1 cups vegetable broth
14 oz canned diced tomatoes, undrained
1/2 tsp salt
1/4 tsp pepper
2 tbs cilantro, chopped

Recipe Directions for Spanish Rice

  1. Saute onion and garlic in oil until translucent

  2. Add tomatoes, vegetable broth, salt and pepper

  3. Bring to a boil

  4. Add rice and cook according to package instructions for the rice

  5. Stir in cilantro just before serving
