Recipe Ingredients for Spanish Rice Quinoa

1 cup Quinoa
0.25 tsp Garlic Powder
1 tsp Chili Powder
1/4 tsp Cumin
1 medium (2-1/2" dia) Onions
1 medium raw Bell Pepper Red

Recipe Directions for Spanish Rice Quinoa

Heat 2 Tbsp vegetable oil in a large saucepan over medium high heat. Stir in 1 cup quinoa, 1 medium onion (diced), 3 cloves garlic (minced), 1 medium bell pepper (finely chopped). Cook and stir 5-10 minutes until the onion is tender, and the guinoa has lightly toasted. Stir in 1 can Rotel tomatoes (lime and cilantro) and 2 1/2 cups water. Then, season with 1 teaspoon chili powder, 1/4 teaspoon garlic powder, and 1/4 teaspoon cumin. Bring to a boil, then reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the liquid is absorbed, about 30 minutes. Stir the quinoa occasionally as it cooks.
