Spanish Rice (No Meat) Recipe

Meatless Spanish Rice. I usually add a tablespoon of Taco Bell Hot Sauce to the pot while it's cooking.

Recipe Ingredients for Spanish Rice (No meat)

1 tbsp canola oil
1 small onion, diced
1 red bell pepper, diced
2 garlic cloves, minced
14 1/2 oz diced tomatoes, undrained
3/4 cup brown rice
1/2 cup chicken stock
1/2 cup water
2 tbsp cumin
1 tsp paprika

Recipe Directions for Spanish Rice (No meat)

  1. Heat canola oil in a very large skillet.

  2. Saute onions and bell pepper until soft. Add garlic.

  3. Add remaining ingredients and bring to a boil.

  4. Reduce heat and simmer until the rice is cooked and the water is absorbed, about 45 minutes.

  5. This is great with ground beef mixed in and/or topped with cheese and baked, but I was trying to reduce the fat.
