1 chopped onion
1 1/2 cup brown rice
2 tbls olive oil
14 oz chopped tomatoes
2 cups chicken broth
1 cup salsa
14 oz cooked black beans
12 1/2 oz cooked chicken breast
2 cloves garlic

Recipe Directions for Spanish Rice w/Chicken and Black Beans

  1. heat olive oil

  2. brown rice add onion and garlic

  3. cook until tender

  4. add remaining ingredients

  5. except chicken and black beans

  6. cook covered until liquid is mostly absorbed

  7. add chicken and black beans and cook until rice is tender
