Spanish Rice with good protein and fibre.

Recipe Ingredients for Spanish Rice & Bulgar

2 cup Beans, Small White, Mature Seeds
28 oz Tomatoes, Red, Ripe
1 large Onions
1 clove Garlic
1 large Peppers, Sweet, Green
6 oz Spinach
1/2 cup Bulgar Wheat
1/2 cup Rice, Brown, Medium-grain
1 serving Purified Drinking Water
2 tsp Paprika
1/4 tsp Pepper, Black
1/8 tsp Cayenne Pepper
1 tbsp Olive Oil

Recipe Directions for Spanish Rice & Bulgar

  1. Saute onion and garlic in oil. Add chopped peppers and cook a bit longer. Add rice and bulgar and stir to coat. Add tomatoes, spinach, spices and cooked beans or no-salt-added canned white kidney beans. Add 1 cup of water. Cook until rice is tender.

  2. Note: Spinach is not part of the original recipe, but has been added to increase the potassium content. It could be omitted, but goes well with the dish.
