Recipe Ingredients for Spanish Rice with Black Beans

3 cups rice
1 1/2 pounds ground beef round
1 large onion, diced
1 large green pepper, diced
1 tsp salt
1/2 tsp chili powder
28 ounce can diced tomatoes
14 ounce can black beans
1 can tomato soup
2 cups water
14 ounce can corn, drained

Recipe Directions for Spanish Rice with Black Beans

  1. Drain and rinse the black beans and corn.

  2. Soak the rice in 2 quarts hot water.

  3. Brown ground beef in a Dutch oven. Drain and return to dutch oven. Add the onion and green pepper and sear until softened.

  4. Drain the rice and add to the beef mixture. Stir in the beans, tomatoes, tomato soup and water. Bring to boil over medium high heat. Reduce heat to low and cook for 30 minutes or until rice is soft and liquid is absorbed.
