You can use bacon if you are not worried about cals.

Recipe Ingredients for Spanish Rice with Bacon

3 oz turkey bacon
2 oz pork loin
3 teaspoons canola oil
1 3/4 medium onion, chopped
1 1/2 cups uncooked long grain rice
3 cups water
15 oz diced tomatoes
2 medium bell peppers
2 teaspoons chili powder
3/4 teaspoon salt

Recipe Directions for Spanish Rice with Bacon

In a large skillet, cook bacon and pork over medium heat until crisp. Remove to paper towels. Add oil to the drippings; saute onion for 3 minutes. Add rice; stir until golden brown, about 5 minutes. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until rice is tender. Sprinkle with bacon.
