Low fat version Spanish rice. Just substitute fat free chicken broth for the oil and you have a low fat tasty recipe

Recipe Ingredients for Spanish Rice 1 g fat

1 1/2 cups rice
2 1/2 cups fat free chicken broth, unsalted
1 cup tomato sauce, unsalted
3 cloves garlic, finely chopped garlic
1/4 medium onion
6 tablespoons of finely chopped parsley (optional)
2 tablespoons fat free chicken broth, unsalted

Recipe Directions for Spanish Rice 1 g fat

  1. In a medium sauce pan, heat 2 TBS Fat free chicken broth over medium heat. Add in the fresh garlic and onion. Saute for 1-2 minutes until softened. Add in dry rice. Stir for about 5 minutes until rice becomes a golden brown color.

  2. Add in 2 1/2 cups broth and tomato sauce (Slowly into rice, not directly onto hot pan!) Add in the parsley if you're using it. Stir it up and bring to a boil. Once it starts boiling, turn the heat to low and cover. Let it simmer for 20 minutes and fluff with a fork.
