Like a frittata, loaded with kale

Recipe Ingredients for Spanish potato kale chorizo tortilla

8 large eggs
2 cups cooked kale
1 cup diced potato, cooked
1/2 yellow pepper, diced
2 links Spanish chorizo
1/2 tbs. olive oil

Recipe Directions for Spanish potato kale chorizo tortilla

Make sure all the veggies are cooked. Stir them into the beaten eggs. Salt and pepper to taste. Oil pan, pour in mixture, cook 5 min on med. heat, then bake in oven 375 for 10 min until cooked through. Could easily skip the chorizo, or reduce the amount - most of the calories are from the chorizo.
