Recipe Ingredients for Spanish Potato Garlic Soup

1 large onion, thinly sliced (2 cups)
2 large potatoes, thinly sliced
1 tsp paprika
1 tbsp olive oil
1 cup tomatoes, chopped
1 tsp thyme
20 cloves garlic, (1 large whole head)
1/4 cup miso
1 1/2 vegetable bouillon cubes (or three cups veg broth)
6 cups water (three for the bouillon -- if using 3 cups canned bouillon instead of cubes, just use 3 cups water)

Recipe Directions for Spanish Potato Garlic Soup

  1. Make garlic broth: cut of the stem end of the head of garlic, break into cloves and peel, roast at 400 degrees for 15-20 minutes until golden (not brown). In blender on high, purée roasted garlic, miso, water and broth until smooth.

  2. Sauté onions, potatoes, paprika in the oil, stirring constantly, five minutes.

  3. Add tomatoes, thyme and simmer for 3 minutes.

  4. Add garlic broth and simmer gently for 10 minutes until potatoes are tender.

  5. Put on the classical guitar music, discuss passion and death.
