An easy egg and vegetable recipe, great for using up vegetables, can add meat. Good hot or cold

Recipe Ingredients for spanish omlette

1 large Egg, Whole
1 large Egg, Whole

1/2 cup Peas, Green
1 oz Beans
1 Medium Tomatoes
1 Medium Tomatoes
10 strips Potatoes
1 serving Pork, Cured, Ham, Boneless
1 small Onions
1 clove Garlic

Recipe Directions for spanish omlette

  1. thin slice the potatoes,

  2. dice vegetables and cut ham into 2cm cubes,

  3. fry off potaoes and leave to one side,

  4. fry off the onion and garlic and put in bowl with vegetables,

  5. beat eggs together.

  6. Lay potato slices on base of frying pan over heat,

  7. mix vegetables, ham and onion mix and pour on top potatoes,

  8. pour eggs evenly all over and cook well meanwhile turn on grill and when the omlette is coming away from the sides of the pan take off heat and grill off the still liqued top, making an egg 'cake you can slice and share warm and also take on picnics
