Hearty brunch or dinner omelette. Add some cilantro or parsley, and a few cherry tomatoes.

Recipe Ingredients for Spanish Omelette

1 teaspoon extra-virgin olive oil
3 oz potato, diced
2 oz chopped bell pepper
2 oz chopped onion
1 large egg
1/2 cup Egg Whites
1/4 teaspoon salt
1 Freshly ground pepper
2 oz grated low fat cheddar cheese

Recipe Directions for Spanish Omelette

  1. Heat the oil in a 6-inch nonstick skillet over medium-high heat. Add potatoes and cook until golden brown, abt 5 minutes. Stir in bell pepper and onion, and cook until slightly tender, abt 2 minutes.

  2. Meanwhile, Blend the egg, egg beaters, salt and pepper, and cheese in a medium bowl, and add to the potato mixture. Reduce the heat to medium-low and cook and stir until starting to set, 3 to 4 minutes. Place cover on the pan and cook until the top is set, and the bottom is slightly browned, 2 to 3 minutes. Slide the omelet onto a plate and serve.
