Spanish omelette from Weight Watchers

Recipe Ingredients for Spanish Omelette

1 large(50 g) Egg, Whole
1 large(33 g) Egg, White
0.25 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1 small whole (2-2/5" dia)(91 g) Tomatoes, Red, Ripe
1 slice, medium (1/8" thick)(14 g) Onions
1/2 medium Green Zucchini
1 serving Medium Pitted Black Olives

Recipe Directions for Spanish Omelette

  1. Combine eggs and milk in a bowl. Season well with salt and pepper and lightly beat until combined.

  2. Heat a large non-stick frying pan over medium heat. Spray with oil. Add eggs and tilt, so that base of pan is covered with egg mixture. Cook without stirring for 2 minutes, or until bottom of omelette begins to set. Sprinkle with shallots, tomatoes, olives, and zucchini.

  3. Tilt pan at a slight angle and flip half of the omelette over onto other half. Cook for a further 2-3 minutes, or until eggs are just cooked through. Serve immediately.
