Dr. B's vegetable and spice ingredients to make two 6 oz Spanish omelets. Note: Egg Beaters or eggs are not included.

Recipe Ingredients for Spanish Omelet Vegetable Ingredients. No Eggs.

3 oz Celery
2 oz Peppers, Sweet, Green
3 oz Onions
4 oz Mushrooms
1 clove Garlic
1 tsp Chili Powder
1 tbsp Tomato Paste
1 dash Salt, Table
1 dash Pepper, Black

Recipe Directions for Spanish Omelet Vegetable Ingredients. No Eggs.

  1. Spray Frying pan with a PAM.

  2. Saute vegetables with seasonings. Cook on low heat until just soft.

  3. Pour Egg Beaters or scrambled eggs into a separate pan sprayed with PAM.

  4. Cook over very low heat without stirring until eggs are almost firm.

  5. To firm up uncooked Egg Beaters, slide blade of spatula around edge of omelet from time to time.

  6. Gently flip over eggs and place sauteed vegetables on top and fold.
