Spanish styled omelet made with whole eggs, sausage, potato and red pepper toppings.

Recipe Ingredients for Spanish Omelet

2 small (1-3/4" to 2-1/2" dia.) Potatoes, Boiled
7 medium Egg, Whole
1 patty, cooked (raw dimensions: 3-7/8" dia x 1/4" thick) Pork Sausage, Fresh, Cooked
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red

Recipe Directions for Spanish Omelet

  1. Wisk 7 eggs together in a bowl, add salt to personal taste.

  2. Cook sausage and potatoes individually (ideal if wanting to use leftovers), and slice into medium slices.

  3. Slice the red pepper into thin strips, removing the seeds.

  4. Add toppings to heated frying pan with a little melted butter, and pour eggs over. Start at high heat and then lower as the eggs cook.
