Recipe Ingredients for Spanish Omelet

1 T olive oil
1 large yellow onion, chopped
3 oz chorizo sausage, cut in half moons
1 pound red potatoes, diced
1/2 t kosher salt
1/2 t pepper
3/4 c parsley, roughly chopped
15 large eggs, beaten
1 c shredded cheddar cheese

Recipe Directions for Spanish Omelet

  1. Heat oven to 400

  2. Heat oil in skillet; add yellow onion and cook for 5 minutes.

  3. Add the chorizo sausage, potatoes, 1/2 t salt; 1/2 t pepper; cook until potatoes are tender, about 10 minutes.

  4. Stir in parsley

  5. Pour into a skillet, stir, top with manchego cheese and transfer to oven

  6. Bake until puffed and brown and knife comes out clean, about 15 minutes.
