My alteration on Hamburger Stew (serves 12)

Recipe Ingredients for Spanish Ground Turkey Stew

1 tbsp Extra Virgin Olive Oil
1 1/4 pounds Ground Turkey, 93% lean
1 small (90g) onion, chopped
1 tbsp minced Garlic
2 large (850g total) Sweet Potato
10 ounces Mushrooms, halved
15 ounce Chick Peas, canned, drained, and rinced
15 ounce Kidney Beans, canned, drained and rinced
32 ounce Chicken Broth, 99% Fat Free
1 tbsp Parsley
1 tsp Salt or Adobo Seasoning
1 tsp Black Pepper
1 tsp Coriander
1/2 tsp Cumin
1/2 tsp thyme

Recipe Directions for Spanish Ground Turkey Stew

Add oil, onion, garlic, sweet potatos and turkey to large stock pot on high heat. Cook, stiring occasionally to break up meat, until turley is cooked through, about 10 minutes. Add beans and cook another 5 minutes. Add broth, cover. Simmer on low, stiring occasionally an hour. Add Mushrooms, cook 15 minutes more. Serve.
