Poached eggs in tomato sauce on toast

Recipe Ingredients for Spanish Eggs

4 eggs
2 T flour
14 1/2 oz stewed tomato
11 1/2 oz tomato juice
4 slices wheat bread

Recipe Directions for Spanish Eggs

  1. Blend flour with 1/2 cup water in blender

  2. Chop stewed tomatoes until chunky and then mix with flour mixture in frying pan

  3. Add whatever spices and salt to taste

  4. When tomato mixture is hot, break eggs into boiling mixture and spoon mixture over over the tops of eggs until eggs are cooked.

  5. Serve over toast
