Recipe Ingredients for Spanish Eggplant w/ zucchini

16 oz Eggplant
1/2 medium Squash, Summer, Zucchini, Includes Skin
8 oz Diced Tomatoes with Basil Garlic and Oregano
4 oz Tomato Sauce No Salt Added
1/2 cup Olive Oil
1 tsp Italian Seasoning
1 cup, chopped Onions
1 serving betterbody foods organic white and blue agave
3 tsp Minced Garlic

Recipe Directions for Spanish Eggplant w/ zucchini

cook onion in olive oil 10 mins over medium heat. then mix in zucchini, garlic, and eggplant cook over medium high heat for 10 mins. then mix in remaining ingredient in separate pan and stir. toss vegetable mixture into tomato mixture and bring to boil. cover and turn down to low and simmer for 15 mins. enjoy
