Recipe Ingredients for Spanish Cod

1 tablespoon butter
2 tablespoon extra virgin olive oil
1/2 cup finely chopped onion
4 tablespoons chopped fresh garlic
2 cup tomato sauce
30 cherry tomatoes, halved
3/4 cup chopped green olives
1/2 cup marinated artichoke hearts
1 lb cod fillets

Recipe Directions for Spanish Cod

  1. Heat butter and olive oil in a large skillet over medium heat. Cook and stir onions and garlic until onions are slightly tender, being careful not to burn the garlic.

  2. Add tomato sauce and cherry tomatoes, and bring to a simmer.

  3. Stir in green olives and marinated artichokes.

  4. Cook fillets in sauce over medium heat for 8 to 10 minutes, or until easily flaked with a fork. Serve immediately.
