Recipe Ingredients for Spanish Chicken Soup

140 grams Chicken
1/2 cup Diced Tomatoes
0.25 cup sliced Jalapeno Pepper
1 oz Cilantro
1 medium (4-1/8" long) Onions, Spring Or Scallions
0.5 oz Apple Cider Vinegar
1 Teaspoon Juice
8 oz Kitchen Basics Beef Broth (Low sodium)
1 cup (8 fl oz) Water

Recipe Directions for Spanish Chicken Soup

  1. In a small pot add beef broth, water, chicken, jalapeno (put two knife slits in pepper) and garlic salt.

  2. Remove petter after about 5 minutes or taste broth to make sure it has a little flavor of jalapeno.

  3. Cook chicken through and remove from broth, let cool and shred with fingers.

  4. Put tomatoes, cilantro and a 1 to 3 inch piece of the pepper in blender. Pulse until creamy. Add puree to broth and simmer a few minutes over ned heat.

  5. Lower heat to med-low, add chichen green onion, lemon juice, a package of stevia and vinegar.

  6. Simmer 10-15 minutes. Garmish with fresh green onion and cilantro.
