A throw-it-together and pop it in the oven supper.

Recipe Ingredients for Spanish Chicken & Rice Bake

10 3/4 ounce cream of chicken soup
1 cup salsa
1/2 cup water
1 cup whole kernel corn
3/4 cup uncooked brown rice
1 pound boneless, skinless chicken breast tenderloins
1/2 teaspoon chili powder
1/2 cup shredded cheddar cheese
2 cups black beans

Recipe Directions for Spanish Chicken & Rice Bake

  1. Soak rice in cold water for 10 minutes. Drain.

  2. Mix soup, salsa, water, corn, beans and rice in 2-quart shallow baking dish.

  3. Top with chicken and sprinkle with chili powder.

  4. Cover tightly with casserole lid or foil.

  5. Bake at 375F for 45 minutes or so.

  6. Sprinkle with cheese.
