Spanish Chicken Recipe

Chicken with a lot of flavor - very easy and quick to cook. prep time about 5 minutes. Cook time about 25 minutes

Recipe Ingredients for Spanish Chicken

1 lbs. boneless skinless chicken breast
14 oz can diced tomatoes
1/2 cup low sodium chicken broth
1 red pepper (cut in strips)
1 onion (cut into 1/2 inch wedges)
2 tsp minced garlic
1 tsp paprika
1 tsp thyme
1 tsp black pepper
1 tsp red pepper flakes
1 tsp salt
1/4 cup flour
2 tbsp olive oil

Recipe Directions for Spanish Chicken

  1. Mix all seasonings and flour together. (except red pepper flakes)

  2. Sprinkle (2tbsp) of flour / seasoning mix on to the chicken and reserve rest for later.

  3. Heat on med-high heat the olive oil and fry chicken 3-4 minutes on each side until brown.

  4. once chicken is done pull out and set aside (keep warm) then to the same pan add onion and pepper. Cook for about 4-5 minutes.

  5. Then add diced tomatoes, chicken broth, red pepper flakes and rest of flour/seasoning mixture. Bring to boil, reduce heat to simmer add chicken and cover. Continue to cook for an additional 10-15 minutes. Stirring occassionaly.
