Recipe Ingredients for Spanish Chicken

215 g cooked chicken breast
1 large onion, sliced
3 cloves garlic, chopped
70 g chorizo, sliced
1 tsp smoked paprika
600 g canned tomatoes
200 ml water
150 g mushrooms, quartered
1 red bell pepper, sliced

Recipe Directions for Spanish Chicken

  1. Dry fry onion & garlic until soft.

  2. In another pan, dry fry chorizo until fat is released and sausage is slightly crisped. Drain sausage on kitchen paper and discard fat.

  3. Add chorizo and paprika to onions, cook for 2-3 minutes then add tomatoes.

  4. Once simmering, add mushrooms and red pepper. Cook for ten minutes then add the chicken and heat through.

  5. Serve with salad and rice or potatoes.
