Recipe Ingredients for Spanish Chicken

24 oz Fresh
8 oz Mushrooms
2 tbsp Extra Virgin Olive Oil
1 cup, sliced Onions
15 oz Diced Tomatoes, No Salt Added
1 medium Yellow Hothouse Bell Pepper
2 tsp Spices Oregano Leaves
1/4 tsp Spices Ground Black Pepper
2 tsp Paprika
2 clove Garlic
0.5 tsp Pepper, Red Or Cayenne
12 olives Spanish Olives

Recipe Directions for Spanish Chicken

  1. Prep Ingredients:

  2. Zest orange peel.

  3. Mince garlic.

  4. Thinly slice onion.

  5. Clean and slice mushrooms.

  6. Clean and dice yellow pepper.

  7. Slice olives into quarters lengthwise.

  8. Sprinkle Chicken with ground pepper.

  9. Heat olive oil in non stick saute pan to medium/high heat and brown chicken thighs on both sides - about 2 minutes each side.

  10. Add onion and cook until onion starts to brown.

  11. Add minced garlic, bell pepper, red pepper flakes, paprika, and oregano and continue cooking for 5 minutes.

  12. Add sliced olives, orange zest, and diced tomatoes with juices.

  13. Lower heat to medium/low; cover and simmer for 30 minutes stirring occasionally. Add a little water or low sodium chicken broth during cooking if it become too dry.
