Fish soup with garlic-almond preparation (fairly high-calorie)

Recipe Ingredients for Spanish Bouillabaisse

1 1/2 tbsp butter
1 cup onion, chopped
6 1/2 cups Pomi Chopped Tomatoes (2 packages)
18 shrimp
3 cod fillets
3 cloves garlic
3 oz sliced almonds, raw
1/3 cup dry whole wheat couscous
2 tbsp olive oil
1 tsp salt

Recipe Directions for Spanish Bouillabaisse

  1. Heat the butter in a heavy-bottomed soup pot over medium to medium-high heat, and then throw in the onion. Cook for 2-4 minutes.

  2. Put in tomatoes.

  3. Bring to a boil, stirring occasionally. Then turn heat down and let simmer for 15 to 20 min, while you prepare the garlic-almond puree.

  4. In a mortar, crush the sliced almonds and put in a bowl. Then crush the garlic with small handfuls of the almonds. Mix in the bowl along with the couscous and salt and pepper.

  5. Chop the cod and devein the shrimp, but leave the shells on.

  6. Put all fish in the simmering tomato soup and cook for five minutes or until fish and shrimp are done.

  7. Take off the heat, pull out all the shrimp, wait for them to cool, and then take off their shells and throw them back in.

  8. Serve each bowl with a few spoonfuls of garlic-almond puree over the top.
