Cuban garbanzo bean soup - love that fiber!

Recipe Ingredients for Spanish Bean Soup

4 c water
1/2 lb ham
1/4 lb chorizo
48 oz garbanzo beans
2 c potatoes, diced
6 cloves garlic, chopped
1 c green pepper
1 c red pepper
1 c onion
1 tbsp tomato paste

Recipe Directions for Spanish Bean Soup

  1. Boil the ham, preferably on bone, for at least 15 min.

  2. In the meantime, saute garlic in a small amt of olive oil for 30 sec. Add onions and peppers and saute until tender.

  3. Add tomato paste to the garlic mixture and cook on low heat a minute or 2. (this is called sofrito!)

  4. Add the garlic mixture, potatoes, garbanzos and sliced chorizo to ham broth.

  5. Simmer at least 1 hr or till beans are tender.
