An eggless version of the Greek Original, this recipe uses a bit of shredded Mozzarella to help bind the indgredients in the Phyllo Dough

Recipe Ingredients for Spanikopita

600 grams Spinach
500 grams Traditional Feta Crumbled
1 cup, shredded Mozzarella, Whole Milk Cheese
1 cup Onions
2 cloves, raw Garlic
0.75 cup Butter
12 sheet dough Phyllo Dough

Recipe Directions for Spanikopita

Thaw and squeeze water from frozen spinach. Place in bowl. Saute Onion and minced garlic in a tsp of Olive Oil and add to chopped spinach. Shredd Mozzarella and crumble the fets cheese over the spinach mixture. Mix well. Spread out a single sheet of phyllo dough and lightly brush with melted butter. Place 3/4 of the spincha mix onto the dough and fold as you see fit. I prefer rectangles to triangles, but that is only because I stink at triangles! Bake at 400 degrees for 20 minutes or until golden. Serve plain or with Tzatziki Sauce.
