Not quite made from scratch... but better than store bought. Nod to Moosewood Cookbook for the awesome recipe.

Recipe Ingredients for Spanikopita

2 tbsp olive oil
420 g onion
2 1/2 lb raw spinach
1 tsp oregano
1 tbsp basil
3 tbsp flour
5 cloves garlic
1 lb feta cheese
1 cup low fat 1% cottage cheese
1 lb phyllo pastry
60 g butter
6 tbsp olive oil

Recipe Directions for Spanikopita

  1. Chop your veggies first as it will take a while. Remove the stems from the spinach and chop finely. Chop the onion.

  2. Put olive oil into a dutch oven and heat up onion and herbs until they are limp. Add the spinach and cook down for about 8 minutes. You won't be able to fit it all in the pot at first, but it reduces quickly. Once the spinach is wilted, add the garlic. Add 3 tbsp of flour - sprinkling it over the spinach mixture and stirring it in a little at a time. Cook 2 to 3 minutes more.

  3. Remove from heat. Add the crumbled feta cheese and cottage cheese. Taste to adjust the seasoning. At this point it would make a kick-ass dip!

  4. Melt the butter, add olive oil. Grease a cookie sheet. Add half of the phyllo, one leaf at a time, greasing each layer as you go. Pour the filling over the pastry, and continue layering the other half of the phyllo.

  5. The edges will go past the edge of the pan. Don't worry about it. Cut the pastry into squares for serving size before you bake it.

  6. Bake at 375 for 45 minutes until golden.
