Spinach stuffed triangular pastry

Recipe Ingredients for Spanakopita

2 lbs fresh spinach
1 1/2 cups low salt low fat feta cheese
1/2 cup grated pecorino romano cheese
2 eggs slightly beaten
2 tablespoons chopped fresh mint
1/2 teaspoon ground nutmeg
1/2 lbs filo dough
2 tablespoons olive oil

Recipe Directions for Spanakopita

  1. Heat a large frying pan over medium high heat. Add spinach with only the rinsing water clinging to the leaves, cover and cooked until wilted, about 1 minute and squeeze out almost all the water or 1 package Trader Joe's frozen spinach, thawed and squeezed.

  2. Place in a large bowl and add the cheeses, egg, mint and nutmeg. Stir well to combine, add salt & pepper to taste. If you like hot foods, add one finely chop serrano or jalapeno pepper. Preheat oven to 375 degrees F.

  3. Lightly spray a baking sheet with Olive oil. Remove on sheet of filo, place on lightly sprayed counter, do same to 2 more sheets. Cut the stack of filo sheets in 8 equal strips. Place about 1 tablespoon filling about inch from the bottom of each strip. Fold the uncovered end over the filling on the diagonal to form a triangular shape. Bring the bottom of the triangle up against the edge. Continue folding in this manner until the tip of the strip is reached, forming a triangular pastry. Place on prepared baking sheet with last fold on the bottom. When the sheet is filled, lightly spray with olive oil.

  4. Bake until golden, about 15 minutes. Remove from the oven and transfer to a platter. Serve immediately.
