Spinach and Feta Phyllo Triangles

Recipe Ingredients for Spanakopita

9 T butter
1 lb baby spinach
1/2 lb feta cheese, crumbled
1/2 t freshly grated nutmeg
1/2 t ground black pepper
2 c flour
1/3 c shortening

Recipe Directions for Spanakopita

  1. Melt 1 T butter in a 12" heavy skillet over moderate heat.

  2. Add spinach and cook, stirring until wilted and tender, about 4 minutes.

  3. Remove from heat and cool.

  4. Squeeze spinach y handsful to remove as much liquid as possible, then coarsely chop.

  5. Transfer to a bowl and stir in feta, nutmeg and pepper.

  6. Put a rack in the middle of oven. Preheat to 375 degrees.

  7. Melt remainint stick of butter.

  8. Put phyllo stack on a work surface with a long side nearest you (keep remaining sheets covered) and brush with some melted butter.

  9. Top with another phyllo sheet and brush with more butter. Cut phylo stack crosswise in to 6 strips.

  10. Put a heaping teaspoon of filling near one bottom corner of each strip and fold corner of phyllo over to enclose filling and form a triangle. Continue folding strip (like a flag) maintaining triangle shape.

  11. Put triangle sem side down on a large baking sheet and brush top with butter.

  12. Bake triangles until golden brown, about 20 minutes.

  13. Cool slightly before serving.

  14. *The unbaked pastry triangles can be frozen for up to one month. Arange in one layer on a baking sheet and freeze until firm. Then transfer to sealable plastic bags and freeze. Do not thaw before baking: the baking time may be slightly longer.
