chicken, spinach and feta meatballs. I served over salad greens with half a whole wheat flat bread.

Recipe Ingredients for Spanakopita Meatballs

3 c spinach
3 lbs ground chicken
1 c onion, finely chopped
2 tsp minced garlic
150 g feta, crumbled
1 tsp oregano
1 tsp rosemary
1 tsp salt
2 eggs
5 tbsp breadcrumbs

Recipe Directions for Spanakopita Meatballs

  2. Preheat oven to 350F.

  3. Using a food processor, finely shred the spinach.

  4. Mix everything together in a large bowl, then form into small balls using your hands.

  5. Transfer to oven dish and quickly grill for a few minutes to brown slightly. Bake for 20 - 30 minutes or until cooked through and browned on top.
