Quiche reminiscent of the greek spanakopita. If you don't want to use the leek recipe mix, just use basic spices and maybe more green onion. Salt, pepper, garlic, parsley, cayenne if your spicy :) I like to make these the night before and heat them up in the AM for breakfast. Serve with a little reduced fat sour cream if you want. Only 94 Calories and 4.6 grams of fat though!

Recipe Ingredients for Spana Quiche

2 Pillsbury Pie Crusts
2 cup egg substitute
2 cup low fat milk
5 oz Athenos Reduced Fat Feta Traditional Crumbled
18 oz spinach, frozen chopped
2 cup mushrooms
4 green onions
1 tbls dill

Recipe Directions for Spana Quiche

  1. Pie Crusts in the Pie Plate as directed

  2. Mix everything together

  3. Pour into the pie crusts

  4. Bake until the crusts are done and center is mostly set

  5. Let sit for 20 minutes or so
