Recipe Ingredients for Spaghettini with Chopped Shrimp and Scallops in Rich Broth

3 ounces shrimp, medium, in their shells
5 ounces scallops, fresh
1/4 cup extra virgin olive oil
1/4 cup onions, finely chopped
2 teaspoons garlic, fresh, finely minced
1 hot pepper, small, fresh
1/2 cup white wine, dry
1 tomato, peeled, seeded, finely chopped
1/2 teaspoon salt, sea
1 pound spaghettini, whole wheat
1 tablespoon unsalted butter, softened
6 tablespoons parsley, fresh, flat leaf

Recipe Directions for Spaghettini with Chopped Shrimp and Scallops in Rich Broth

  1. Peel the shrimp, reserving the shells. Carefully devein the shrimp and coarsely chop them. Coarsely chop the scallops and combine them with the shrimp and ¼ cup water in the food processor. Finely chop. Set aside in refrigerator.

  2. Start the broth by heating the olive oil in a large sauté pan. Add the reserved shrimp shells, onion, garlic, and hot pepper. Sauté over medium heat for ten minutes. Add the wine and reduce to 1/3 cup. Add 4 cups water and boil down to 3 cups. Strain into a larger sauté pan. Add tomato; bring to a boil. Simmer gently while you cook the pasta.

  3. Boil 5 quarts water in large pot. Drop in the spaghettini. Cook about 4 minutes until al dente stage. Drain the pasta and add to the broth (fumet). Fold in the shrimp and scallops along with butter and parsley. Simmer 1-2 minutes until seafood is cooked through, and serve immediately.
