Cross between carbonara (minus the ham) and agli-olio, uses a single egg to coat the just-cooked pasta, and roasted garlic-infused olive oil with parsley as dressing. Can take any number of add-ins.

Recipe Ingredients for Spaghetti uovo-olio

8 oz. spaghetti
1 egg
2 tbsp extra virgin olive oil
1 cup parsley

Recipe Directions for Spaghetti uovo-olio

  1. Cook pasta to taste.

  2. While pasta is cooking, beat an egg into a bowl large enough to accommodate the cooked pasta. Add salt and pepper.

  3. After cooking, drain pasta in colander and immediately transfer to bowl with egg, tossing quickly to coat evenly as egg cooks in hot pasta.

  4. Mix in chopped parsley and olive oil. Add seasonings or add-ins as needed.
