Recipe Ingredients for Spaghetti with Sweet Potatoes and Ricotta

12 ounces whole wheat spaghetti
2 tablespoons olive oil
1 pound sweet potatoes, peeled and cut into 1/2 in. pieces
1 salt and pepper
1 onion or several shallots, sliced
1 tbsp. chopped fresh rosemary (or dried and crushed)
1/4 cup parmesan cheese
1/2 cup ricotta cheese

Recipe Directions for Spaghetti with Sweet Potatoes and Ricotta

  1. Cook pasta according to package directions.

  2. Reserve 1/2 cup of the cooking water. Drain pasta and return it to the pot

  3. Meanwhile, heat oil in large nonstick skillet over medium heat. Add the sweet potatoes, 3/4 tsp. salt and pepper to tast. Cook covered, stirring occasionally for 10 minutes

  4. Add shallots/onion and rosemary and cook, uncovered, stirring occasionally until potatoes are tender, 3 to 5 min.

  5. Toss pasta with potato mixture, Parmesan and reserved cooking water. Dollup with ricotta before serving.
